They are yummy!<BR/>Chunky Peppermint Fudge Dream Cookies<BR/>3/4 c. packed brown sugar<BR/>3/4 c. sugar<BR/>1/2 c. butter or margarine, softened<BR/>1 tsp vanilla<BR/>2 eggs<BR/>2 oz unsweetened baking chocolate, melted and cooled<BR/>2 1/4 c. all purpose flour<BR/>1 tsp baking soda<BR/>2 pkgs creme de menthe candies<BR/>1 1/2 c. semisweet chocolate chunks or morsels<BR/><BR/>Heat oven to 350 degrees. In large bowl beat brown sugar, sugar, butter, shortening, vanilla and eggs with electric mixer on medium speed until smooth. Beat in melted baking chocolate. Beat in flour and baking soda until well blended. Reserve 1 c. of chopped mints. Stir remaining mints and the chocolate chunks into dough.<BR/>On ungreased cookie sheet, drop dough by 1/4 cupfuls 2 inches apart. Bake 11 to 15 minutes or until centers of cookies no longer look moist. Immediately sprinkle with remaining mints. Cool 1 minute; remove from cookie sheet to wire rack. Gooey Toffee Butter Cake.<BR/><BR/>Cake:<BR/>1 (18.25 oz) box of yellow cake mix<BR/>1 lg egg<BR/>1/2 cup (1stick) unsalted butter<BR/><BR/>Filling:<BR/>1 (8oz) cream cheese<BR/>2 lg eggs <BR/>1 tsp pure vanilla extract<BR/>1 (16oz) box confectioners' sugar<BR/>1/2 c. (1 stick) of unsalted butter, melted<BR/>1 c. almond toffee bits or chocolate toffee bits<BR/><BR/>Preheat oven 350 degrees. Lightly grease a 13x9x2 inch baking pan<BR/><BR/>Cake: In a bowl combine the cake mix, egg, and butter and mix with electric mixer. Pour into pan and pat into bottom of pan and set aside. <BR/><BR/>Filling: Still using an electric mixer, beat cream cheese until smooth. Beat in the eggs and vanilla. Dump in confectioners' sugar and beat well. Reduce speed and slowly pour in butter. Mix well. Fold in toffee bits. Pour filling onto cake mixutre and spread evenly. Bake 40-50 minutes. Don't be afraid to make a judgement call on the cooking time, because oven temps vary. You want center to be a little gooey. so don't bake it past that point.<BR/>Remove from oven and allow to cool completely. Mix sugar, corn syrup and water in lg saucepan. Stir over med heat until sugar dissolves. Boil, without stirring, until temp reaches 310 degrees (F) or until drops of syrup form hard and brittle threads in cold water. Remove from heat. Stir in flavoring oil and coloring. Pour onto foil. You take some chocolate wafer cookies (you can get them in any cookie aisle at your local supermarket), then you put a small scoop of cool whip in between each cookie wafer using a knife. In the end I think we use 4-6 pkgs of cool whip! Once you start to have a few of these wafers and cool whip, make a wreath shape with them (a large circle). Once you are done with making your circle, use any left over cool whip to cover the top and sides of your wreath. It will look like a white circle in the end, next we add some green and red gummy candies (swedish berry candies) on top. We also like to keep the wafers that have broken in the package and crumble them over top of the wreath too. <BR/>Once you are done decorating it, put it in the freezer over night and then when you are ready for it take it out and serve. Mix in remaining ingredients. Chill several hours. On floured surface, roll about 1/2" thick. Cut with miniature cookie cutters or cut into very small squares or other shape. Place on greased cookie sheets. Bake at 375 degrees 6 - 10 minutes, depending on size. Cool. Decorate with small red frosting roses & green leaves. You need Hershey Hugs (not...OK, my recipe is easy. You need Hershey Hugs (not Kisses, Hugs!), and you need Christmas M&Ms. Then find round pretzels. Jays makes them, and sometimes there are a generic store brand that is round. Place the pretzels on a greased cookie sheet. Fill the sheet up. Place a Hug in the center of each pretzel. Place in a 200 degree over for just a couple of minutes. Just let the Hugs get warm, DON'T wait for them to melt. Take them out of the oven, and press the Hug into the pretzel with an M&M. Let them cool, remove from sheet, and Enjoy! We make them every year, and they're fantastic. Salty and sweet!<BR/><BR/>I'll link to you in tomorrow's post!
